  • Kitchen Diva’s Portuguese Chicken Recipe!

  • Working full-time shouldn’t prevent you from entertaining during the week if you want to. This easy crockpot creation is easy and delicious!

    My husband, Michael’s family is of Portuguese descent. I love making this dish for him and for our guests because it looks so complex, and it’s so simple to prepare. Chorizo sausage is a common ingredient in Spanish recipes. It’s delicious and provides a fantastic flavor to the tomato sauce that blankets the chicken while it slowly cooks in the crockpot.

    This recipe can also be prepared by baking the chicken in a 350 degree oven for 45 minutes to an hour, but using a crockpot makes this an effortless dish for entertaining! Serve this fabulous dish with couscous (takes 5 minutes and I’ll demo it on the show), a pre-packaged salad, and store bought dessert and you’re done with dinner!

    1/2 pound chorizo sausage, chopped

    2 onions, chopped

    4 cloves garlic, chopped

    2-1/2 pounds chicken pieces (bone in and skin on), rinsed and dried

    1 teaspoon dried oregano leaves

    1 teaspoon fine Sea Salt

    1 teaspoon Hot Salt

    1/4 teaspoon pepper

    1 (3 pound) jar of prepared pasta sauce

    1 (14 ounce) can of whole tomatoes, chopped

    1 (2 pound) butternut squash, peeled, seeded, and cut into 2-inch pieces

    1 14 ounce can artichoke hearts, drained and chopped

    4 ounce can sliced black olives, drained

    Combine all ingredients except artichokes and olives in 4 quart crock pot; mix well. Cover and cook on LOW for 7-9 hours until chicken is thoroughly cooked. Stir in artichoke hearts and olives 15 minutes before the chicken is ready. Serve over hot cooked rice or couscous.
