  • Breakfast With Chef Melba!

  • Waffles Recipe

    2 Cups flour sifted
    2 tsp baking powder
    2 cups eggnog
    Cinnamon
    Nutmeg
    2 egg yolks
    2 egg whites
    2 ounces melted butter - unsalted

    Mix dry ingredients into a medium bowl. Add the yolks, eggnog, butter and mix well. We don’t want the batter to be lumpy. Fold in the egg whites. Do not mix them in too much.
    Heat waffle iron (this will also give your batter a moment to sit). Spray the waffle iron with a vegetable spray.
    Pour waffle mixture starting from the middle of waffle iron.
    Close the iron and cook for about 4 minutes.

    Add Southern Fried Chicken, maple syrup, strawberry butter and you are ready to PAAARRRTYY!!

    Melba’s Southern Fried Chicken

    1 Whole Chicken (2 ½ - 3 lbs.)
    2 teaspoons Salt
    1 teaspoon Black Pepper
    1 teaspoon Paprika
    ½ teaspoon Poultry Seasoning
    ½ teaspoon Garlic Powder
    Brown Mustard
    2 Cups Buttermilk
    Flour
    Peanut or Vegetable Oil

    Cut chicken into 8 parts – Wash clean, pat dry.
    Pour buttermilk over chicken - refrigerate for 2 hours.
    Season chicken with salt, pepper, paprika, poultry seasoning, garlic powder and a tad of brown mustard.
    Place flour and remaining seasonings in a brown paper bag. Add 3 pieces of chicken and shake it like you mean it! Now this chicken will be nicely coated.
    Place oil in a cast iron skillet until it is at 350 degrees.
    Add chicken and let fry approximately 15-20 minutes, until it is beautifully brown and crispy on one side, turn and cook about 15 minutes on the other side.
    Place chicken on a paper towel and let drain any additional oil.
